TOOLS YOU’LL NEED FOR PERFECT MASHED CAULIFLOWER
We use a food processor to puree for a smooth texture.
Other kitchen tooling options – a potato ricer and food mill work well.
To achieve a rustic mashed cauliflower with texture… use an immersion blender, handheld mixer or potato masher.
SHORT ON TIME?
We have an easy solution. Purchase two, 12-ounce bags of fresh, cleaned and cut cauliflower florets in your produce section to make prep even easier.

Cook’s Notes
For a more buttery, decadent dish, add a full stick of butter vs. the half stick called for.
Special Diet Notes
Low Carb, Low Calorie, Keto, Vegetarian, Gluten Free, and Sugar-Free. To make Vegan, simply swap the butter for Vegan butter or your favorite extra-virgin olive oil. Add the olive oil in 1 tablespoon increments… until you reach desired consistency and flavor profile.
Get Creative with Optional Add-Ins
Minced chives, roasted garlic, grated Parmesan, sliced scallions, bacon and cheddar cheese.

- 1 head cauliflower 3-4 cups florets
- 1/2 stick butter
- 1 teaspoon sea salt
- fresh ground black pepper to taste
Ingredients

- Slice a cauliflower head in half. Remove stem, tough leaves and break into florets.
- Fill a large pot with approximately 2 inches of water. Set a steamer basket in the bottom. Place florets in the steamer basket.
- Bring to a boil. Cover with a lid and reduce to a simmer, steaming until very tender, approximately 15-20 minutes.
- To check tenderness, pierce the stem of a floret with a pairing knife. If it slides in and out easily, it is done.
- With tongs, remove cauliflower from the steaming basket. Transfer to a food processor. Add butter. Puree until smooth.
- Scrape down the sides of the food processor. Add the sea salt and fresh ground pepper. Puree again to incorporate. Check seasoning and adjust to taste.
