Pulled Pork: Carolina Style

Ingredients
  • 1,7 pound pork shoulder butt roast
  • 1/3cup Simple Barbecue Spice Blendcan substitute store-bought if preferred
  • 3cups Sugar-Free Hickory Barbecue Saucecan substitute store-bought if preferred
  • 16ounces Cider Coleslaw
  • 22 slider rollsoptional
Instructions
  1. Position oven rack in the lower third of the oven. Preheat oven to 300 degrees Fahrenheit.
  2. Prepare the simple barbecue spice blend. (See link in the ingredients list above.)
  3. Place pork roast in a roasting pan. Pat roast dry.
  4. Coat/massage all sides of the roast generously with the barbecue spice blend. Place roast fat cap side up in the pan. Cook for 7 hours or until it is fall-apart fork tender. Cook time is approximately 1 hour per pound.
  5. Allow the roast to cool for 15 minutes before shredding.
  6. With two forks, shred pork roast in large pieces.
  7. To serve as sliders: with tongs place pulled pork on the bottom of the slider bun. Drizzle with barbecue sauce. Top with Cider Cole Slaw and bun. Serve with additional sauce on the side.
Recipe Notes

Serving size per person: 5 ounces.

If serving as sliders: 1 1/2 to 2 ounces per slider.

Cook time is approximately 1 hour per pound.

For easy clean-up and serving, we use double foil pans for this recipe. Foil pans are placed on top of a sheet pan for additional support.
