Our friends and family instantly fell in love with this basic red sauce that couldn’t be easier to make. Just a few simple ingredients dropped into a saucepan and some simmer time yields a delicious, sweet tomato sauce.

The secret ingredient: Butter. As the sauce simmers the butter and onion subtly add flavor and a layer of silky decadence you’ll crave again and again.
This sauce was inspired by Marcella Hazan’s tomato sauce recipe in what we consider to be our Bible of Italian Cooking – Essentials of Classic Italian Cooking.
We’ve adapted it to our liking over the years.

- 1, 28 ounce can diced tomatoes
- 1 onion sliced in half and peeled
- 1 stick unsalted butter
- 1/2 teaspoon sea salt
- 1 pound packaged gnocchi
- basil torn for garnish
- freshly grated Parmigiano-Reggiano for garnish

- In a medium saucepan, add tomatoes including juice, onion, sea salt and butter. Bring to a simmer. Stir occasionally and mash large chunks of tomato with a wooden spoon. Cook uncovered for 50 minutes.
- Remove onion from sauce and discard. Stir and adjust seasoning if desired.
- Bring a stock pot of water to a boil. With a large slotted spoon carefully add gnocchi to the boiling water. Cook for 2-3 minutes until the gnocchi floats. Remove floating gnocchi from the boiling water with a slotted spoon and place in a strainer to drain excess water.
- Toss gnocchi with pomodoro sauce and plate. Garnish with torn basil and freshly grated parmesan if desired. Serve immediately.
This sauce freezes well. Place in an airtight container or freezer bag with air removed. Remove onion before freezing. Freeze for up to 6 months.
